Family Food: Chocolate Peanut-Butter “Rice Krispie” Treats

It’s a quiet Thanksgiving day, with the fire crackling in the fireplace and the turkey baking in the oven. The younger kids are doing a puzzle, the older kids are taking turns with the wii and the adults are having a pleasant conversation about the weather. Or maybe the younger kids are running around the house and screaming, the older kids are fighting over who’s turn it is with the wii and the adults are arguing politics and trying to out-yell each other. Either way, this is your day to be thankful for what you have, enjoy great food and spend time with your family. And what better way to get everyone in the same room working together than an activity that will not only keep everyone productive but will also let you cross one dessert off your to-do list? (That’s right, Mama, this is multi-tasking at its best.)

Here is the quintessential “family togetherness” activity that we all see in those commercials and Hallmark movies, except I’ve made one minor change to it: I’ve made it healthy.

Chocolate-Peanut-Butter “Rice Krispie” Treats

Instead of Rice Krispies, I’m using rice cakes, but only Lundberg’s. Their rice cakes have almost double the rice so they are crunchier and stay crunchy for a long time. If you use any other type of rice cake I can’t guarantee you’ll get the same consistency. You can get them at various health stores as well as at Trader Joe’s. I substituted peanut butter for marshmallows. That makes it gooey and the honey helps make it sticky.


½ package of Lundberg’s Rice Cakes
½ jar all-natural peanut butter
2 tablespoons honey
½ cup chocolate chips (I used semi-sweet, dairy-free chips from Trader Joe’s but any type will work)


Put rice cakes in large ziplock bag and crumble using your hands.

Transfer to a large bowl and mix with peanut butter. Add honey and mix (you can use your hands).

Melt the chocolate chips in a microwave-safe bowl for 30 seconds and stir until you reach a smooth consistency.

Add to the mix. Make sure everything is completely covered with the chocolate.

Refrigerate for at least two hours.

Using your hands, make bite-size balls. It might take a little bit until they stick together because they are very crumbly, but they will stick together. Rinse your hands every so often because they stick better with clean hands.

You can put in paper candy cups or wrap with foil candy sheets.

Makes about 40 balls.
